Ingredients:
3 Julian Bakery Paleo Wraps
1/2 T coconut oil
1/2 c green cabbage, shredded thin
1/2 c carrot, shredded
1/2 c zucchini, shredded
1/4 c fresh chopped basil
1/4 c chopped cilantro (or parsley)
Directions:
- Preheat oven to 350 degrees
- Melt coconut oil in skillet over medium heat
- Add veggies and herbs and cook about 5 minutes, until softened
- Place Paleo Wraps on flat surface so they look like a diamond, not square
- Spoon 1/3 of veggie mixture onto each Paleo Wrap
- Fold bottom corner up, sides in, then roll toward top corner to close egg roll
- Transfer to greased or parchment-lined baking sheet
- Bake about 5 minutes or until golden brown
(Alternatively, you can pan fry egg rolls in a greased skillet turning every 30 seconds until golden brown)
