Mushroom Stroganoff

1 T coconut oil
16 oz sliced mushrooms
2 T minced garlic
2 T minced onion
2 T nutritional yeast
pink salt and pepper, to taste
2 t grated parmesan cheese


  1. Melt coconut oil over med-high heat in skillet
  2. Add mushrooms, garlic, and onions and cook until mushrooms are soft
  3. Stir in nutritional yeast and pepper and continue to heat until liquid cooks down
  4. Remove from heat and stir in parmesan cheese and pink salt

*Excellent served on top of zucchini or cucumber “noodles”
