Ingredients:
1/2 c coconut flour
1 T cinnamon
½ t nutmeg
3/4 t baking soda
1/2 t pink salt
4 eggs
24-36 drops SweetLeaf stevia
1 c zucchini, shredded finely
1 ripe banana, mashed
1 T coconut oil
1/2 c walnuts, chopped
Directions:
- Preheat oven to 350 degrees.
- Grease a bread loaf pan or line with parchment paper.
- Shred zucchini finely.
- Place shredded zucchini in kitchen towel and squeeze all the moisture out of it.
- Process eggs, stevia, coconut flour, oil, and banana together in food processor.
- Stir cinnamon, nutmeg, salt, baking soda, and zucchini into mixture until the batter is smooth.
- Fold in walnuts.
- Pour batter into loaf pan.
- Bake for 45-50 minutes (or until a toothpick inserted into the center comes out clean).
- Allow to cool.
- Remove from loaf pan and slice into 8 slices.
