Crockpot Apple Butter

Ingredients: 

3 lbs apples
1 t cinnamon
1/2 t ginger
1/4 t cloves
1/4 c water

Directions: 
  1. Heat crockpot to low
  2. Chop and core apples then place into crockpot
  3. Add spices and water to apples and cover with lid
  4. Cook for 6 hours
  5. Transfer apples to blender/food processor (or use an immersion blender) to puree
  6. Transfer back to crockpot
  7. Loosely cover with lid, allowing steam to escape, and cook 6-8 more hours (or until mixture is reduced by nearly half)
  8. Transfer to glass jar(s) and store in refrigerator for up to 2 weeks
  9. Note: You may use 3 servings (6T) if you want to count this as your fruit in P2 or you may use 1 serving (2T) along with ½ of an apple cut into slices
