Healthy Chocolate Muffins / Cupcakes

1 c almond butter
2 medium ripe bananas 
2 eggs
1 t vanilla
2 t liquid stevia
1/4 c unsweetened cocoa powder
1/2 t baking soda
1 t apple cider vinegar
(optional) toppings: unsweetened coconut flakes, raw cacao nibs, raisins, etc


  1. Preheat oven to 400 degrees and line muffin pan with liners.
  2. Place all ingredients into food processor. 
  3. Blend until well mixed.
  4. Pour batter into muffin pan.
  5. Add additional toppings of your choice to each muffin and lightly stir into each cup (if desired).
  6. Bake for 15 minutes.
