Chai Apple Cookies

1 c almond butter
1/2 c unsweetened apple sauce
1 egg
2 T coconut flour
1 t baking soda
1 t cinnamon
1/4 t pink salt
1/4 t ground cloves
1/4 t ginger
pinch of nutmeg
1/2 large apple, peeled and finely diced


  1. Preheat oven to 350 degrees
  2. Line baking sheets with parchment paper
  3. Mix almond butter, egg, and apple sauce in large bowl with hand mixer (or in food processor)
  4. Add in coconut flour, baking soda, and spices then blend until combined
  5. Fold in diced apple with spatula
  6. Spoon about 1 T batter at a time onto 2 baking sheets and spread into 20 circles
  7. Bake 8-12 minutes, until edges of cookies are slightly firm or dry to the touch and top of cookies no longer look wet
  8. Remove from oven and let cool for 5 minutes on baking sheet
  9. Transfer to wire cooling rack to finish cooling
