Ingredients:
1 T coconut oil
1 large portabella mushroom cap
2 eggs
2 T feta cheese crumbles
1/8 t rosemary
1/8 t garlic powder
pink salt and pepper, to taste
Directions:
- Slice mushroom into thin strips
- Melt coconut oil in skillet over med-high heat
- Add mushrooms and cook until softened
- Stir in rosemary, garlic powder, pink salt, and pepper
- Crack eggs on top of mushrooms
- Place lid on skillet and cook until egg whites are cooked through
- Transfer to plate
- Sprinkle with feta cheese
