Bell Pepper Eggs

8 oz bell pepper
2 eggs
1/8 t onion powder
1/8 t garlic powder
black pepper, to taste
pink salt, to taste
1 t chives


  1. Preheat skillet to med-high heat and add enough water to cover the bottom
  2. Slice 4-5 pepper rings, about 1 cm thick each
  3. Chop remaing pepper into small pieces and add to skillet
  4. Cook, stirring occasionally, until softened
  5. Whisk together eggs and spices
  6. Stir cooked peppers into egg mixture
  7. Add more water to skillet, if not fully covered
  8. Place pepper rings into skillet
  9. Pour egg mixture into pepper slices
  10. Cover with lid and cook until eggs are cooked through (3-5 minutes)
  11. Transfer each pepper egg to plate with spatula
  12. Sprinkle with pink salt
