Spinach-Cauli Cup Eggs

1 small head cauliflower 
4 oz spinach
1/2 c mozzarella cheese
Pink salt and pepper, to taste
12 eggs


  1. Preheat oven to 400 degrees
  2. Boil cauliflower until just about soft, drain
  3. In a food processor blend cauliflower, spinach and mozzarella cheese
  4. Place about 1/4 to 1/3 cup mixture in a cupcake tin
  5. Press mixture up the sides of cupcake tin to form a cup
  6. Bake about 30 minutes
  7. At this point, “cups” can be cooled and frozen for later use, if desired (21 calories per “cup”)
  8. Turn oven down to 350 degrees
  9. Crack an egg in center of each cup
  10. Bake for 20 minutes or until egg is desired consistency
